I had to make bread for a family reunion. I'm usually asked to bring bread to family gatherings because I make frou-frou type bakery breads. Of course since I make it, I don't have to pay the frou-frou bakery prices AND I get to control the type and quality of ingredients I use - bonus.
I couldn’t decide what to make. Chive Potato Bread or Corn and Molasses Bread? I turned to a higher authority to help me decide – Twitter.
I ended up making both.
1 Cup of water
1 Tablespoon of margarine or butter (I prefer butter, I think it tastes better in baking)
½ Teaspoon of salt
3 Tablespoons of molasses
¼ Cup of cornmeal
2 Cups of flour (I rarely use bread flour in my bread maker and it still turns out great)
2 Teaspoons of yeast (or one envelope)
**Notice I didn’t mention local or organic or whatever for the ingredients in the recipe. I did this on purpose because I’m not sure what’s available in your area or desirable to you. You guys are mature enough (except for maybe Rob of Rob's World) to figure that stuff out for yourself. (Just kidding Rob!)**
Select the 1 pound loaf size on your bread machine (if applicable.) Add the ingredients in the order listed and according to the manufacturer’s directions. Start the bread machine and wait until done. Tip: Coat the inside of the measuring spoon with a bit of oil before you use it to measure the molasses. The oil lubricates the spoon and keeps the sticky molasses from sticking to spoon as you are pouring.
Optional: Take this bread to a family reunion and amaze them with your bread making skillz.
Extra Optional: Assure your husband before baking this bread that you will not use up all of the molasses in the house and yes, indeed, there will be enough molasses left in the bottle for his usual gallon of coffee the next morning.
